After cooking low and slow, the beef tips become as tender as butter and full of rich flavor, especially combined with homemade red wine gravy with mushrooms. The taste is incredible, and the aroma that fills your house after cooking this meal all day is just irresistible!

- Beef round roast: Budget-friendly round roast is a great choice for slow cooker and pot roast recipes. Cooking it low and slow gives you the most tender, delicious beef tips. You can also use cubed chuck roast or any stew meat of your choice.
- Garlic cloves: For this recipe, peeled whole garlic cloves are placed in the slow cooker over the beef tips for supreme flavor.

Allow it to sear for 4 minutes on each side to give it a caramelized coating. Once seared, add the beef tips to your slow cooker. Top with yellow onions, peeled whole garlic cloves, and dried or fresh thyme.
- Reduce the heat of the skillet to medium and melt butter. Add sliced mushrooms with a pinch of salt and stir to coat with the butter. Saute for 5 minutes, until the mushrooms are soft. Stir occasionally, scraping up the brown bits from the bottom of the pan.
- Add water and beef base to the skillet and stir to combine. Then, add the contents of the skillet to the slow cooker with your beef tips. Cover your crockpot and cook on low for 5 hours, or on high for 2 ½ hours, until the beef is fork-tender. If you have more time, you can cook for 6 hours for even greater flavor.
- Finally, once the beef tips are done cooking, combine red wine with cornstarch and add it to the slow cooker. Turn heat up to high and cook for 20 minutes to thicken the gravy. Alternatively, add the gravy to a skillet over medium heat along with cornstarch and red wine, and heat until thickened (this only takes a minute or two). Serve over mashed potatoes, rice, egg noodles, or roasted vegetables, and enjoy!

Crockpot Beef Tips Recipe with Mushroom Gravy
My crockpot beef tips recipe is a budget-friendly, easy comfort food with tender beef round roast and creamy red wine mushroom gravy!

Beef Tips
- 1½ pounds beef round roast cut into chunks
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon unsalted butter
- 1 yellow onion sliced (about 1 cup)
- 5-6 whole garlic cloves peeled
- 1 sprig fresh thyme or ¼ tsp. dried thyme
Mushroom Gravy
- ½ tablespoon unsalted butter
- 8 ounces sliced white mushrooms
- 1 pinch salt
- 1½ cups water
- ½ tablespoon beef base or beef stock; don't use water if using beef stock
- 1 tablespoon red wine
- 1 tablespoon cornstarch
